Agave is cooked in a bread-like oven that is made from rock and bricks above the ground . This oven is heated with black oak .
The agave is milled part mechanical and finished by hand with wood mallet .
Fermented in a 200 liter oak vat . Double distilled in stainless still alembic with cooper serpentine
