Tequila Cabeza Sagrado is a 100% Agave Extra Anejo made from a blend of 8 year old and 10 year old reserve tequilas selected from the "Bodega de Maduracion" at El Ranchito Distillery in Arandas, Jalisco.
These barrels were selected by the Vivanco Family and The 86 Co. on December 8th, 2016. The blend yielded 1330 botles. The strength from cask averaged 47% abv.
Master Distiller: Jose Manuel Vivanco
The Vivanco family have been cultivating agave in the Los Altos region of Jalisco for five generations. All of the agave used to make Tequila Cabeza Sagrado is estate grown in fields that have belonged to the family since 1922. The agaves are slow cooked in the brick ovens for 24 hours and cooled for 24 hours before they are milled to extract the "agua miel" that will be fermented and distilled for tequila.
Fermentation for the tequila takes place in open vessels. This invites wild yeasts in the process. Rows of mango trees at the distillery provide wild yeasts that contribute to the style of tequila made at the El Ranchito Distillery. Once the final sugars have been converted to alcohol the musto is distilled twice in copper pot stills to a proof of 60% abv before being placed in used American whiskey barrels for aging.
