Description
Chacolo Azul Telcruz Vol. 6B Capón 3 Años Agave Spirit – 48.53% ABV | 750ml
Chacolo Azul Telcruz Vol. 6B is a rare and highly sought-after agave spirit produced by renowned fifth-generation tabernero Don Macario Partida Ramos in Zapotitlán de Vadillo, Jalisco. Crafted from the distinctive Azul Telcruz agave and matured through an extended 3-year capón process, this limited-production release exemplifies the Partida family's dedication to preserving traditional agave cultivation and ancestral distillation techniques. Bottled at 48.53% ABV in a 750ml format, it offers remarkable depth, minerality, and concentrated agave character.
Process & Profile
Produced in the traditional taberna style of southern Jalisco, Vol. 6B is made from Azul Telcruz agave, a regional variety cultivated by the Partida family. Because it is produced outside the Mezcal Denomination of Origin, it is classified as a Destilado de Agave (Agave Spirit).
A defining characteristic of this release is its 3-year capón maturation. After the agave sends up its flowering stalk, the quiote is cut, and the plant remains in the ground for an additional three years. This practice allows the agave to continue concentrating sugars, minerals, and aromatic compounds, resulting in exceptional complexity and texture.
The harvested agaves are roasted in underground earthen ovens, naturally fermented using ambient yeasts and spring water, and distilled in traditional Filipino-style stills that have been utilized by the Partida family for generations.
