Chimeco Jabali De Jabali Agave Spirits 750ml

Chimeco Jabali de Jabali from mezcalero Edgar Gonzalez was produced in San Cristobal Lachirioag, Oaxaca. The agaves are cooked in an underground pit oven, crushed by tahona, fermented with wild yeasts, and double distilled in copper. Edgar is perhaps most well-known as the co-owner/producer of Mezcal Tosba and Dakabend rum.

Chimeco is an “open-source” agave project that allows mezcaleros to release their small-batch spirits. The project is a collaboration between independent producers and the team behind Dakabend Rum and Tosba Mezcal.
