Claridad Ensamble de Siete from Onofre Ortíz is Bramaderos, Miahuatlán, Oaxaca. Onofre is a 5th generation mezcalero, and the son of legendary mezcalero Don Beto Ortiz. This was produced using maguey Tepeztate (A. mamorata), Jabalí (A. convallis), Espadín (A. angustifolia), Tobalá (A. potatorum), Bicuishe (A. karwinskii), Madrecuishe (A. karwinskii), and Mexicano (A. rhodacantha). He cooks the agaves for this mezcal for 3 days in a stone pit oven, mills the agave using a small mechanical shredder, ferments in cypress tanks with well water and open air yeasts, and double distills in an alembic copper pot still.
