Del Maguey Las Milpas is crafted from mature Espadín agaves grown for 8–10 years in the highlands overlooking Oaxaca's Central Valleys. The agaves are roasted for approximately four days in a traditional earthen horno carved directly into a granite hillside, imparting remarkable depth and character.
After roasting, the agaves are crushed using a horse-drawn molino, naturally fermented for 7–10 days in open-air wooden fermentation tanks using ambient yeasts and spring water, then double distilled in small copper pot stills. These time-honored methods preserve the distinctive terroir and craftsmanship of the Cruz Antonio family.
