Del Maguey San Dionisio Ocotepec is produced using mature Espadín and Tepeztate agaves harvested from the hillsides surrounding San Dionisio Ocotepec. The agaves are roasted in traditional underground earthen pit ovens before being crushed with a horse-drawn molino.

Natural fermentation takes place in open-air wooden vats using native yeasts and spring water. The fermented mash is then double distilled in small copper pot stills, preserving the agaves' vibrant character and the unique terroir of the region. Every step follows traditional methods that have been passed down through generations of the Cruz Antonio family.
