Del Maguey Santo Domingo Albarradas is crafted from mature Espadín agaves that grow for 8–10 years in the cool, high-altitude Mixe region of Oaxaca. The mountain climate slows the agaves' maturation, allowing them to develop greater natural sweetness and complexity.

The agaves are roasted for 4–8 days in underground earthen pit ovens fueled by oak, then crushed using a traditional horse-drawn molino. Fermentation takes place naturally in large wooden vats with fresh spring water before the mezcal is double distilled in traditional copper pot stills, preserving the vibrant character of both the agave and the village's unique terroir.
