Process & Production
Humano Texas Edition begins with Blue Weber Agave from the Highlands of Jalisco. The agave is cooked using a combination of oven and autoclave methods, with 60% oven cooking and 40% autoclave cooking. After cooking, the agave is processed through a roller mill before undergoing closed fermentation.
The tequila is double distilled in stainless-steel pot stills equipped with copper. After distillation, the tequila is fully aged for six months in select Still Austin bourbon barrels. This extended barrel maturation gives the reposado its distinctive combination of cooked agave character and bourbon-influenced notes of vanilla, toasted oak, caramel, and baking spice.
Appearance

Humano Texas Edition stands out for its direct connection between Jalisco tequila and Texas bourbon. Rather than simply using traditional tequila barrels, this limited release is fully aged for six months in select Still Austin bourbon barrels, creating a distinct bridge between the two spirits.
The collaboration also has a personal history. Humano co-founder Luis Abundis helped launch Still Austin Whiskey Co. in 2017, and the Texas Edition reunites him with Still Austin co-founder Chris Seals through this tequila collaboration.
