Lamata Yaquiana begins with mature Yaquiana (Agave angustifolia) harvested in the rugged landscapes of Sonora. The agaves are slowly cooked in a traditional cylindrical earthen pit oven before being milled with a small mechanical grinder.
Fermentation takes place underground in traditional stone, earth, and clay barranco pits using well water and native microorganisms, allowing the agave to develop remarkable depth and complexity. The fermented mash is then distilled twice in a hybrid copper and steel pot still, producing a spirit that beautifully balances the rustic traditions of Sonora with exceptional clarity and elegance.
