Process & Profile

Produced using traditional ancestral methods, mature agaves are roasted in underground earthen ovens, crushed by hand, naturally fermented with native yeasts, and distilled in clay pot stills. During the final distillation, fresh poleo is added to the still, allowing its essential oils and delicate botanical character to integrate naturally with the spirit. The result is a beautifully layered agave spirit that highlights both the purity of the agave and the vibrant freshness of the herb.
