Mezcal Reviews presents Mezcal Burrito Fiestero x Mezcal Ultramundo Limited Edition Destilado de Agave
This limited release is a one-time collaboration between two of the most highly regarded mezcal brands from the state of Durango: Burrito Fiestero and Ultramundo. This unique ensamble is composed of 54.5% maguey Verde (Agave salmiana crassispina) and 45.5% maguey Lamparillo (Agave asperrima).
The maguey Verde was harvested from the Sierra de Durango, about an hour outside of Nombre de Dios. The maguey Lamparillo was sourced from a 24,000-acre ranch in the Zona del Silencio, near the town of Mapimí. Both Nombre de Dios and Mapimí are officially recognized as Pueblos Mágicos, celebrated for their historical and cultural significance in Mexican history.
The agaves were roasted together in an underground pit oven, then milled first by hand using axes and later with a mechanical shredder. Fermentation took place in open wooden tanks using spring water and only naturally occurring wild yeasts. The first distillation was performed in a copper alembic still, followed by a second distillation in a traditional Duranguense viejo still made of clay and wood. Throughout the entire process, the hand of maestro mezcalero Juan Manuel Conde remained steady, skilled, and true.
