Process & Production

Palomo Barril Mezcal is crafted from mature Barril agaves, a member of the Karwinskii family known for its tall, slender growth and distinctive flavor profile. The agaves are slowly roasted in traditional underground earthen pit ovens before being crushed using a horse-drawn tahona.

Natural fermentation takes place in open wooden vats using ambient yeasts, allowing the agave's terroir to shine through. The fermented mash is then double distilled in copper pot stills, producing a mezcal with remarkable purity, complexity, and balance.

Appearance

Crystal clear with brilliant silver highlights and exceptional clarity.

Tasting Notes

Finish: Long, clean, and dry with lingering herbal spice, mineral notes, gentle smoke, and sweet roasted agave.

What Makes It Special

Barril is one of the most distinctive agaves in the Karwinskii family, producing mezcals that emphasize herbal freshness, minerality, and elegance rather than heavy smoke. Under the guidance of Carlos Méndez Blas, Palomo preserves these characteristics through traditional artisanal methods, allowing the unique personality of the agave to take center stage.

The result is a beautifully balanced mezcal that appeals to both seasoned enthusiasts and those looking to explore beyond Espadín.

How to Enjoy

Enjoy neat in a copita to appreciate its evolving herbal and mineral complexity. Allow the mezcal to rest for several minutes before sipping to reveal additional floral and citrus notes.

Its refined profile pairs beautifully with grilled vegetables, fresh seafood, roasted poultry, aged cheeses, mushrooms, and traditional Oaxacan cuisine.
