Palomo Tepeztate is produced from mature wild Tepeztate agaves, which naturally grow on rocky hillsides and require decades to reach full maturity. Once harvested, the agaves are slowly roasted in traditional underground earthen pit ovens before being crushed using a horse-drawn tahona.

Fermentation takes place naturally in cedar and pine wood vats using native wild yeasts, allowing the agave's distinctive terroir to develop. The fermented mash is then double distilled in traditional copper pot stills, preserving the rich botanical character and remarkable complexity that define Tepeztate mezcal.
