The flavor profile is a dynamic interplay of vegetal brightness (green bell pepper, jalapeño), salinity, and complex sweetness (caramel, fig, or dark cherry). Distinct notes of roasted agave, spice, and earth are layered with the mineral influence of the clay pot distillation.
