Process & Profile

Made from mature Pulquero (Mapisaga) agaves cultivated for over 12 years, the agaves are traditionally roasted in a conical earthen oven fueled with eucalyptus wood. After cooking, they are shredded, naturally fermented in open-air oak vats with indigenous yeasts and well water, then distilled in a copper alembic still. Every batch reflects the craftsmanship of Maestro Nazario Salas Rosas and the distinctive highland terroir of San Miguel Atlapulco, Puebla.
