A subcategory of Agave Angustifolia, geographically the most wide-ranging maguey, relatively short maturation time (8 years), and ease of cultivation mean that Espadín mezcal makes up a large portion of the global market by volume. Zancudo’s Espadín is delicious and easy on the approach. A sweet, full mouthfeel gives way to lemon, caraway, and toasted fennel. There’s a light impression of smoke and it’s so well integrated with the slow-building warmth and sweetness that you could almost miss it.
