Produced in Puebla by maestro mezcalero Delfino Tobón Mejía, this expression begins with mature Espadín agave that is roasted in underground earthen ovens, crushed, and naturally fermented. It is then distilled in a traditional hybrid still made of clay and copper.
For the final distillation, raw chicken and rich mole poblano—made from ingredients like chiles, chocolate, nuts, and spices—are added to the still. As the vapor rises, it passes through the suspended ingredients, infusing the spirit with remarkable depth, texture, and umami complexity.
