Rich, complex, and profoundly representative of traditional agave craftsmanship in Jalisco, Chacolo Ixtero Amarillo Vol. 2C is a rare small-batch Destilado de Agave produced by fifth-generation tabernero Don Macario Partida Ramos. Bottled at 46.5% ABV in a 750ml format, this exceptional release showcases the remarkable depth achieved through an extraordinary 4-year capón process, resulting in a spirit of exceptional concentration, texture, and complexity.


Process & Profile

Produced in Zapotitlán de Vadillo, Jalisco, this expression is made from Ixtero Amarillo (Agave rhodacantha), a regional agave variety cultivated and preserved by the Partida family for generations. Because it is produced outside the official Mezcal Denomination of Origin, it is legally classified as a Destilado de Agave rather than mezcal.

The defining feature of this release is its 4-year capón maturation. Once the agave begins producing its flowering stalk (quiote), the stalk is cut and the plant remains in the ground for an additional four years. During this time, the agave continues concentrating sugars and flavor compounds, creating extraordinary density and complexity.

The agaves are traditionally cooked in underground ovens, fermented naturally with native yeasts in stone fermentation vats using spring water, and double distilled in traditional Filipino-style stills.

Tasting Notes

Nose: Vibrant aromas of lime peel, grapefruit, orange citrus, passionfruit, fresh-cut grass, yogurt-like creaminess, and earthy minerality.

Palate: Full-bodied and oily with savory notes of olive oil, aged cheese, black pepper, cinnamon, anise, grilled pineapple, papaya, and concentrated cooked agave.

Finish: Long and evolving with chalky minerality, herbal complexity, cacao nibs, subtle smoke, and lingering savory depth.
