This release is produced from Líneo agave, a regional agave cultivated in the volcanic highlands surrounding Zapotitlán de Vadillo. As with all Chacolo expressions, the spirit is produced outside the Mezcal Denomination of Origin and is therefore classified as an Agave Spirit (Destilado de Agave).
A defining feature of Vol. 5E is its 3-year capón process. Once the agave sends up its flowering stalk, the quiote is cut and the plant remains in the ground for an additional three years. This prolonged maturation allows the agave to concentrate sugars, minerals, and aromatic compounds, resulting in extraordinary flavor intensity and texture.
