Process & Production
The Tobalá used for Edition No. 5 was planted by Don Valentín Cortés and his family in 2017 and harvested in January 2024 after approximately seven years of growth. The agave is cooked traditionally in an underground conical pit oven, allowing the roasted agave to develop its characteristic depth.
After cooking, the agave is crushed using a tahona and naturally fermented in pine-wood vats. The fermented mash is then double distilled in copper stills, following Dixeebe's 100% artisanal production methods.
