Bottled at 64.1% ABV (128.2 proof) in a 750ml bottle, Batch 12 is an 11-component blend featuring whiskies aged between 16 and 22 years. Non-chill filtered and presented at natural color, this limited release highlights Found North's commitment to creating complex, age-driven Canadian whisky with remarkable depth and balance.


Process & Profile

Batch 12 is composed of 86% corn, 13% rye, and 1% malted barley. At its core is a 16-year-old corn whisky that spent an additional 11 months maturing in heavy-toast, Char #2 new American oak, developing a distinctive profile of rich vanilla, toasted sugars, and subtle savory character. Additional mature corn and rye whiskies, aged in carefully selected new oak casks from multiple cooperages, contribute layers of caramelized sweetness, baking spice, and structured oak, creating one of Found North's most expressive releases to date.


Appearance

Deep amber with rich copper highlights, displaying excellent viscosity and slow, oily legs that reflect its age and cask-strength concentration.


Tasting Notes

Nose: Burnt brown sugar, roasted marshmallow, vanilla bean, caramel, toasted oak, baking spices, orange peel, and dark maple syrup.

Palate: Full-bodied and richly textured with layers of toffee, caramelized sugar, vanilla, cinnamon, clove, toasted oak, dark fruit, peppery rye spice, and rich wood sugars balanced by remarkable sweetness and depth.

Finish: Exceptionally long and warming, with lingering caramel, charred oak, baking spice, vanilla, roasted marshmallow, and a touch of pepper that slowly fades into a refined, oak-driven finish.
