Process & Production

Granja Nómada's mezcal is produced using traditional methods designed to preserve the natural character of the agave. The piñas are cooked slowly in an earthen pit oven using locally sourced oak wood, then crushed with a traditional tahona wheel.

The cooked agave undergoes natural, open-air fermentation in Sabino wooden vats before being double distilled in copper stills. Granja Nómada separates the heads and tails from the distillate, using the heart of the spirit for the finished mezcal.
