Fermentation takes place naturally with ambient yeasts in Sabino wood fermentation vats (tinas). Rather than using a conventional double distillation, Ignacio Juárez employs a traditional copper refrescadera still, an innovative design that allows the spirit to reach its desired purity in a single distillation while preserving exceptional texture, aromatic intensity, and agave character. The 2024 batch yielded only 220 liters, highlighting its small-batch nature.
