Montelobos Ensamble is a unique mezcal created from a blend of Papalote, Espadin, and Tobalá agave. Our piñas are roasted in an underground fire pit filled with volcanic stone for 5-7 days. This is what gives Montelobos mezcal its distinctive smoky flavor. Next, the roasted piñas are cut into pieces by hand with a machete and passed through the mechanical shredder mill to extract the agave nectar. Then the agave is left in open-air pine vats for 7-10 days to ferment. Once fermented, the liquid is distilled twice in copper stilla. That way, we obtain Montelobos Ensamble, a meticulously crafted, artisanally produced mezcal that delivers an explosion of contrasting flavors.
