Process & Production

Tequila Ocho San Jerónimo 2023 begins with agave harvested exclusively from Rancho San Jerónimo, a hilly and rocky field located approximately five miles outside Arandas in the Highlands of Jalisco.

The field is characterized by rich red soil and full sunlight. At harvest, approximately 1,200 tons of overripe agave were obtained, with piñas reaching up to 80 pounds and a sugar content of approximately 32%.

After distillation, the tequila is matured for one year in ex-American oak whiskey barrels. The oak adds depth and richness while allowing the cooked-agave character and terroir of San Jerónimo to remain at the center of the expression.

Appearance

Light amber with warm golden tones developed during its year of oak maturation.

Tasting Notes

Nose: Black tea, pepper, wet tobacco, and cooked agave.

Palate: Rich cooked agave layered with dark cacao, coffee, nutmeg, dried fruit, and salted caramel.

Finish: Long and peppery with buttery texture, gentle oak, warmth, and lingering spice.

What Makes It Special

Tequila Ocho is built around the concept of terroir, with its Single Estate releases identifying the specific field where the agave was grown. The San Jerónimo 2023 vintage allows the character of one particular Highland field and one harvest year to be experienced in the bottle.

San Jerónimo itself is a distinctive Ocho estate, with hilly terrain, rocky ground, rich red soil, and strong sunlight. The overripe agaves harvested from the field contribute to the expression's cooked-agave depth and complexity.

The one-year maturation in ex-American oak whiskey barrels adds notes of cacao, coffee, dried fruit, caramel, and spice while complementing rather than overwhelming the agave character.

How to Enjoy

Neat: Serve in a tequila glass to explore the cooked agave, coffee, cacao, spice, and oak character.

With a Few Drops of Water: A small amount of water can open the aromas and reveal additional layers of fruit and spice.

On the Rocks: Serve over a large cube for a slower, chilled sipping experience.

After Dinner: The combination of cooked agave, dark cacao, coffee, dried fruit, caramel, and spice makes it well suited to sipping after a meal.

Brand Story

Tequila Ocho was created from the collaboration between Carlos Camarena and the late Tomas Estes, with a founding focus on demonstrating that terroir exists in tequila. The brand's Single Estate approach identifies the individual ranch or field where its agave is grown, allowing differences in soil, climate, elevation, and harvest conditions to be expressed through each vintage.

Rather than blending agave from multiple locations into one consistent profile, Tequila Ocho harvests individual fields in their respective seasons. This allows each vintage to tell the story of its particular place and year.
