A delicious new mezcal (hints of herbs, citrus, light pepper!) from the mind of Maestro Mezcalero Don Fortino Ramos, awarded a Silver medal in this year's San Francisco World Spirits Competition. The Jabalí agave is notoriously challenging to work with, and while the agaves are relatively abundant in the wild, there are only a few maestro mezcaleros who know the secret of how to select the right Jabalí and how to process it especially through the very active fermentation phase, and come out with a smooth, beautiful-tasting mezcal.
